Maybe it’s because s’mores are delightfully simple, with only a few ingredients, or maybe it’s because I have an unabashed love for toasted marshmallows. Whatever the reason, experimenting with flavors and textures is endlessly fun.

National S’more Day is right around the corner, so I wanted to share a fresh, miniature take on the classic before the big day arrives. If you enjoyed last year’s ideas, this version riffs on those playful flavors while keeping the preparation easy and approachable.

This version is inspired by last year’s toasted marshmallow waffle sandwiches but scaled down into a bite-size treat. The result is a cute, portable s’more that keeps all the satisfying contrasts—crisp waffle, gooey marshmallow, and melty chocolate—without the need for a campfire.

To assemble these mini s’mores you only need a handful of simple items: mini waffles (homemade or store-bought), marshmallows, chocolate (chips or a small bar), and a magic shell or dipping chocolate for a glossy finish. The combination is quick to put together and makes for a fun snack or party bite.

I used store-bought Eggo minis to keep things convenient and a colorful rainbow sherbet Magic Shell for an extra playful touch. Chocolate chips are optional; they enhance the classic s’more flavor and help create that melty chocolate layer, but the sandwiches are still delicious without them. Use what you have or what you prefer—both work beautifully.

Assembly is straightforward: warm or toast the mini waffles lightly, add a marshmallow or two and a few chocolate chips, then sandwich and press gently to melt the chocolate slightly. For a finishing touch, dip or drizzle with Magic Shell to add a crisp, glossy coating that sets quickly and adds extra sweetness and texture.

These mini s’more waffle sandwiches are playful, easy to customize, and great for gatherings or an indulgent weeknight treat.
