I whipped up these small s’mores ice cream sandwiches to tap into my summer-camp nostalgia while satisfying my grown-up cravings. With hot, toasted marshmallow and melty chocolate balanced by a cold scoop of ice cream, they’re the perfect warm-and-cold treat for a hot day. Ready to make some?

- Your favorite ice cream
- Marshmallows (jumbo marshmallows work great)
- Chocolate (milk, dark, or white, whichever you prefer)
How to Make a S’mores Ice Cream Sandwich
These aren’t complicated—just a few simple steps to build a perfect bite.
- Toast the marshmallows over an open flame—use a campfire or a culinary torch—until they’re warm and slightly gooey.
- Place a piece of chocolate on one graham cracker, top it with the toasted marshmallow, and set aside so the chocolate softens a bit from the heat.
- Scoop a generous ball of ice cream onto a second graham cracker, then sandwich the marshmallow-topped cracker on top. Press gently so the ice cream spreads slightly and the chocolate and marshmallow meld with the cracker.
They’re an easy, crowd-pleasing dessert for a backyard dinner, a casual get-together, or a kid’s birthday party. But honestly, any time toasted marshmallows are involved, I’ll take one—no special occasion required.
