
Now that Christmas has passed, I’m turning my full attention to New Year’s Eve. Happy holidays to everyone — I hope you enjoyed a joyful time, however you celebrated.
Here’s a simple and elegant champagne mimosa popsicle recipe that’s ideal for ringing in the new year. These frozen poptails are easy to make, taste delicious, and double as a clever way to chill your glass of champagne without watering it down: just pop one into your drink.
Follow the recipe below to make a batch for your celebration.

Ingredients (makes about 10 popsicles)
- 1/3 cup water
- 1/3 cup sugar
- 2 cups grapefruit juice (ruby red works nicely)
- 2 cups champagne
- 1/2 cup edible flower petals (optional)
Instructions
1. In a small saucepan, bring the water and sugar to a boil, stirring until the sugar dissolves. Remove from heat and let the simple syrup cool slightly.
2. Stir in the grapefruit juice—freshly squeezed for the brightest flavor, or use bottled if you prefer—and then gently fold in the champagne. Mix carefully so you retain some of the bubbles.
3. Pour the mixture into popsicle molds, leaving a little headspace for expansion as they freeze. If you like a decorative touch, add edible flower petals to each mold; they add visual interest and a subtle floral note.
4. Freeze the molds for about 1 hour to firm up slightly. Remove them briefly, insert the popsicle sticks so they stand straight, then return the molds to the freezer until fully solid (several hours or overnight). Adding the sticks after a short initial freeze helps keep them centered instead of tilting as the liquid settles.
