
Every year around this time I get excited for popsicle season. They’re simple, refreshing, and incredibly satisfying to make. With May here and after returning from a trip full of cocktails, I decided to combine the two and create an easy strawberry mojito popsicle recipe. It’s flexible—made with rum for adults or adapted into a non-alcoholic version for everyone to enjoy.

Ingredients
- 5 fresh strawberries, thinly sliced
- 8–12 fresh mint leaves
- Juice of 1 lime, freshly squeezed
- 3 cups strawberry lemonade
- 2 tablespoons simple syrup
- 3/4 cup white rum (optional)
For a non-alcoholic version, replace the rum with 3/4 cup blended fresh strawberries—just chop the strawberries and puree until smooth.
Directions
In a pitcher, combine the lime juice, strawberry lemonade, simple syrup, and rum (or the blended strawberries if making the alcohol-free version). Stir well to blend the flavors.
Place a few strawberry slices and a couple of mint leaves into each popsicle mold, distributing them evenly for visual appeal and flavor in every pop. Pour the mojito mixture into the molds, leaving a small gap at the top for expansion as they freeze.
To help the sticks set evenly, put the molds in the freezer for about 45 minutes. Take them out briefly, insert the popsicle sticks, and then return the molds to the freezer for at least 4 hours or until fully frozen.
When you’re ready to serve, remove the tray from the freezer and run warm water over the underside of the mold for 20–30 seconds to loosen the popsicles. Gently pull them free and enjoy.
