How to Make a (Really Good) Peach Galette in Under an Hour

I’m making the most of the peaches I picked at the farm, so peach galette it is—simple, fast, and delicious.

Today is peach pie day (and national waffle day), and while a galette isn’t exactly a pie, it’s close enough to celebrate. Ready to bake?

This version uses fresh peaches and a quick homemade filling but keeps things easy with a store-bought crust—perfect for a busy weekday.

Ingredients:

– 1 store-bought pie crust
– 4 ripe peaches, thinly sliced
– 1/2 cup granulated sugar
– 3 tablespoons cornstarch
– 1 teaspoon fresh lime juice (or lemon juice)
– 1/4 teaspoon salt
– 1 tablespoon cold butter, cut into small cubes
– 1 egg white
– 1 tablespoon water
– Additional granulated sugar for sprinkling

Instructions:

1. Preheat the oven to 375°F (190°C).

2. In a large bowl, whisk together the sugar, cornstarch, lime juice, and salt. Add the peach slices and toss gently to coat without breaking the fruit.

3. In a small bowl, beat the egg white with the water to make an egg wash. Set aside.

4. Unroll the pie crust onto a baking sheet lined with parchment. Pile the peach slices into the center of the crust, arranging them in a circular pattern and leaving about a 2-inch border of dough around the edges.

5. Dot the peaches with the cold butter cubes.

6. Fold the crust edges over the peaches, overlapping the dough as needed to create a rustic, pleated edge.

7. Lightly brush the folded crust with the egg wash, then sprinkle the crust and exposed fruit with a little granulated sugar for a crisp, sparkling finish.

8. Bake for about 30 minutes, until the crust is golden and the peach filling is bubbly. Oven times vary, so check for a deep golden color on the crust.

9. Let the galette rest a few minutes before slicing. Serve warm or at room temperature with whipped cream or vanilla ice cream, or enjoy it plain.
