Move beyond the usual toast and try savory hash brown nests—crispy, satisfying bases you can top just like toast but heartier and more filling.
They work perfectly as a creative brunch option and can be set up bar-style so guests can choose their own toppings. Below are a simple recipe and three delicious topping ideas to get you started.
Ingredients for Hash Brown Nests (makes 4 nests, about 4 inches wide)
- 1 bag (1 lb) frozen shredded hash browns, thawed
- 1 egg
- 2 tablespoons flour
- Oil for frying
Directions
In a bowl, combine the thawed shredded hash browns with the flour and the egg. Mix until the ingredients are evenly distributed, then shape the mixture into four round patties roughly 4 inches wide. Press slightly in the center to create a shallow “nest” if you like.
Heat about 1 tablespoon of oil in a skillet over medium-high heat. When the oil is hot, add a patty and cook until golden brown on the bottom, about 5 minutes. Flip carefully and cook the other side until nicely browned and cooked through, another 4–5 minutes. Repeat with the remaining patties, adding more oil as needed.
Transfer cooked nests to a paper towel-lined plate to drain briefly, then top with your favorite savory toppings.
Three favorite topping combinations
1. Avocado Hash Brown Nest: Slice half an avocado and arrange the slices on top of a warm hash brown nest. Spoon on 1 tablespoon salsa and scatter a handful of chopped red onion. Finish with fresh herbs (such as cilantro), salt, and pepper to taste.
2. Salmon and Cream Cheese Hash Brown Nest: Spread 2–3 tablespoons cream cheese over the cooked nest. Layer with 1–2 thin slices of smoked salmon or lox and sprinkle with about 1/2 tablespoon chopped chives for a luxurious, savory bite.
3. Tomato and Ricotta Hash Brown Nest: Dollop a generous spoonful of ricotta on the nest, add two slices of ripe heirloom tomato, then season with salt, pepper, and fresh cilantro (or basil) to taste for a light, bright option.
