
Lately I’ve been drinking chai lattes like it’s my job. It’s the spices — the aroma and flavor feel like fall and the holidays. Since it’s been a while since my last popsicle recipe, I decided to turn my favorite seasonal drink into frozen treats.
I experimented with several variations — coconut milk, cream, and more — and eventually landed on the perfect blend: chai and ice cream. A big part of what makes these so good is the chai concentrate I used.
I partnered with a Brooklyn company, Dona Chai, to create these popsicles. Their chai tea concentrate is one of the best I’ve tried. Made with whole spices that are freshly ground and steeped in small batches, the concentrate delivers a consistent, full-flavored chai experience. The packaging is pretty great too, so I’m officially hooked.
That concentrate is what I used in this recipe. Here are the ingredients and steps to make these ombre chai ice cream pops at home.

Ingredients (makes 10–12 popsicles):
– 16 oz chai tea concentrate
– 4 cups vanilla or French vanilla ice cream
Instructions:
Begin by measuring 4 oz of chai concentrate and evenly distributing it across the bottom of each popsicle mold. This step is optional, but it creates the attractive ombre effect shown in the photos.
Allow the ice cream to soften at room temperature for 10–15 minutes, until it’s soft enough to stir and pour. In a large bowl, combine the softened ice cream with the remaining 12 oz of chai concentrate and mix thoroughly until smooth and fully blended.
Pour the chai–ice cream mixture into the prepared popsicle molds. Place the filled molds in the freezer for 45 minutes, then insert popsicle sticks and return the molds to the freezer for 4–6 hours, or until completely frozen.
To release the popsicles from the molds, briefly run the outside of the mold under warm water for 30–60 seconds to loosen them, then gently pull the popsicles free.


These popsicles make a delightful seasonal treat for Thanksgiving, Christmas, or any cozy autumn day. They’re simple to prepare and offer a playful twist on a classic fall beverage.
