Lately I’ve been testing savory recipes I really love, and one of my favorites is homemade baked potato chips. This version uses a variety of potatoes—sweet potatoes, red potatoes, purple potatoes, and yellow potatoes—for color, texture, and flavor.

These oven-baked chips are tastier and healthier than many store-bought options, and they’re incredibly easy to make. They require only a few minutes of prep before going into the oven to bake to crisp perfection.

Ingredients for Baked Potato Chips

  • Small bag of tri-colored potatoes (yellow, red, and purple)
  • 1 small sweet potato
  • Olive oil, for drizzling
  • Sea salt (I like Himalayan sea salt)

Equipment: parchment paper and a mandoline slicer. A mandoline makes uniform, paper-thin slices which help the chips crisp evenly. Use the slicing guard—the blades are very sharp. Take care when slicing.

Instructions

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Using a mandoline on the thinnest setting, slice the potatoes into even, thin rounds. Consistent thickness helps them bake uniformly.

3. Arrange the slices in a single layer on the parchment; avoid overlapping. Lightly drizzle or brush with olive oil and sprinkle with sea salt. Add a pinch of garlic powder if you want extra savory flavor.

4. Bake for 15–20 minutes, watching closely. Thinner slices may start to brown sooner—check them after about 10 minutes to prevent burning.

5. When golden and crisp, transfer the chips to a cooling rack or a plate lined with paper towels to drain and crisp up further.

Combine the following in a small airtight container: 1/2 cup mayonnaise, 1 tablespoon olive oil, 1/2 clove garlic (minced), and 2 sprigs fresh dill (chopped). Mix well and refrigerate for at least 15 minutes to let the flavors meld.

Sriracha Mayo
Combine the following in a small airtight container: 1/2 cup mayonnaise, 1 tablespoon sriracha (add more for extra heat), and 1 tablespoon chopped cilantro. Mix, taste, and adjust spice level as desired, then refrigerate until ready to serve.
