Red Velvet Mini Waffles Recipe

Ingredients

Waffles

– 2 cups all-purpose flour
– 1/2 cup granulated sugar
– 2 tablespoons cocoa powder
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1/2 cup unsalted butter, melted and cooled
– 1 cup buttermilk, at room temperature
– 2 large eggs, at room temperature
– 2 tablespoons red food coloring
– 1 teaspoon vanilla extract
– cooking spray

Glaze

– 1 1/2 cups powdered sugar
– 4 tablespoons milk
– 1/4 teaspoon salt

Instructions

Begin by preheating your waffle iron. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, and salt. In a separate bowl, whisk the melted butter, buttermilk, eggs, red food coloring, and vanilla until smooth. Pour the wet ingredients into the dry ingredients and stir gently until just combined—avoid overmixing to keep the waffles tender.

Spray the waffle iron with cooking spray. For mini waffles, spoon approximately 1 tablespoon of batter into each well. Cook according to your waffle iron’s instructions until the waffles are set and slightly crisp at the edges. Transfer cooked waffles to a wire rack while you prepare the glaze.

To make the donut glaze, sift the powdered sugar into a small saucepan to remove any lumps. Add the milk and salt, then whisk together. Warm the mixture over low heat, stirring constantly for about 4 minutes until the glaze is smooth and slightly thickened. Remove from the heat and let it cool briefly so it’s thick enough to coat the waffles but still pourable.

Dip the warm mini waffles into the glaze, allowing excess to drip back into the pan, then place glazed waffles on a wire rack to set for a few minutes. Serve warm.

I imagine it would be excellent on the PB&J waffles we tried earlier this year—peanut butter and jelly with a shiny glaze sounds like a real treat.
