Honey Yogurt and Fig Breakfast Pops — Protein-Packed Fruit Bars

Many of the breakfast-of-champions recipes lean toward indulgent sweetness, which I’ll always appreciate. But this recipe is a lighter, quicker option for mornings when you’re not ready for waffles or French toast with ice cream. These honey yogurt fig pops are simple to make, require minimal prep, and freeze into convenient portioned breakfasts you can grab all week long.

I made a batch of these in minutes, popped them in the freezer, and had breakfast ready for several days. They’re perfect for busy mornings—easy to hold, easy to eat, and they travel well.

If you’re not a fan of figs or can’t find them in season, you can substitute any fruit you prefer: strawberries, blueberries, peaches, nectarines, or any soft fruit that freezes well.

Ingredients (makes 6 popsicles)

  • 2 cups vanilla yogurt
  • 1/3 cup honey (adjust to taste)
  • 1/3 cup granola
  • 3 fresh figs (any variety)

Note: flavors can taste less sweet after freezing, so taste the yogurt mixture before freezing and adjust the honey slightly sweeter if you prefer a sweeter final result.

Instructions

1. Wash and dry the figs, then slice them into thin-ish rounds. Set aside.

2. Whisk the honey into the vanilla yogurt until well combined.

3. Place a slice of fig in the bottom of each popsicle mold, then spoon in 1–2 tablespoons of the yogurt mixture.

4. Sprinkle a layer of granola over the yogurt, add more yogurt, another fig slice, and continue layering until each mold is filled.

5. Insert popsicle sticks—the yogurt’s semi-solid texture means you don’t need to wait for partial freezing—and freeze for 3–4 hours or until completely firm.

These pops are wonderfully simple and convenient. Because they’re on a stick they’re easy to eat on the go—grab one for your commute or stash them in a cooler for outings. They’re a great way to enjoy fruit, yogurt, and a bit of crunch from the granola without morning fuss.
