One of my favorite food holidays has arrived — Happy National S’mores Day! To celebrate, I’ve gathered seven creative s’more ideas that put a twist on the classic toasted-marshmallow-and-chocolate sandwich. These are easy to assemble, fun to share, and perfect for turning a simple snack into a special treat.
1. Honey House S’mores
These combine chocolate, cookie-shaped biscuits, toasted marshmallows, and a drizzle of honey for a sweet, floral note. The honey elevates the familiar flavors and pairs especially well with sturdy novelty cookies—house-shaped cookies worked beautifully here. If you haven’t tried honey on a s’more, it’s worth stopping what you’re doing and giving it a go.

2. Key Lime Meringue S’mores
For a bright, citrusy take, layer vanilla or lime meringues with candied lime slices, toasted marshmallows, and graham cracker crumbs. The meringue adds crisp sweetness while the candied lime brings tangy brightness—this variation pushes a s’more into dessert territory that feels fresh and summery.

3. Nutella Caramel Animal S’mores
These are playful and delicious: spread Nutella on animal crackers, toast caramel-flavored marshmallows, and sandwich them together. The Nutella adds a rich hazelnut-chocolate layer while the caramel marshmallow gives a deeper, buttery sweetness that contrasts nicely with the crunchy cracker.

4. Lemon Curd S’mores
If you love lemon, this variation will be a favorite. Use graham crackers as the base, add a generous spoonful of lemon curd, and sandwich with a toasted marshmallow. The bright citrus of the curd cuts through the sweetness, giving each bite a lively, balanced flavor. You can make lemon curd at home for the freshest result.

5. Brownie S’mores
Swap traditional graham crackers for brownie crisps and sandwich colorful toasted marshmallows with a piece of chocolate. The dense chocolate of the brownie crisp makes this version extra indulgent, and bright, toasted marshmallows add a playful pop. It’s a straightforward yet decadent upgrade for chocolate lovers.

6. Pizzelle S’mores
Pizzelle cookies bring a delicate, crisp texture and a hint of anise or vanilla, depending on the variety. Sandwich a twisted marshmallow or novelty marshmallow on a stick between two pizzelles for a charming, European-inspired s’more. The result is light, crisp, and a little unexpected.

7. Pretzel S’mores
One of my personal favorites: salty pretzel chips, chocolate, and a toasted marshmallow create an irresistible sweet-and-salty combo. For extra richness, drizzle with a little homemade dulce de leche or salted caramel. The crunchy pretzel adds texture and a savory counterpoint that makes each bite addictive.
