My favorite recipes are the ones that look impressive and photograph well but don’t require professional chef skills. This seafood pasta is exactly that: simple to make and very satisfying.

This seafood pasta with tomato toast was inspired by flavors I associate with Spain—a place I’m eager to visit. I asked my friend Jess, who has traveled there, to help refine the idea. We shopped ALDI’s selections through Instacart and created a recipe that’s fast, affordable, and very photogenic.

Seafood Pasta with Lemon Alfredo Sauce and Tomato Toast

Cook time: 30 min
Servings: 6–8

All ingredients listed below are ALDI products purchased via Instacart and delivered the same day. If you haven’t used Instacart, it’s easy—the shopper even sent photos of the produce before purchasing.

  • 17 oz Priano Tagliatelle Al Bronzo Pasta Nests
  • 12 oz Sea Queen Jumbo Raw Shrimp (frozen)
  • 14 oz Specially Selected Mussels (frozen)
  • 8 oz Priano Four Cheese Alfredo Sauce
  • Tuscan Garden Spanish Manzanilla Olives (jar)
  • 3 garlic bulbs
  • 1 red onion
  • 1 pint red grape tomatoes
  • 1 bunch organic red vine tomatoes
  • 2 lemons
  • 1 Specially Selected French baguette
  • Stonemill peppercorn grinder
  • Stonemill pink Himalayan salt grinder
  • Carlini extra light olive oil
  • Fresh cilantro, to taste

Seafood Pasta

Preheat the oven to broil. Wash and prep the produce for roasting. Prepare as follows: lemons—cut in half and slice a small piece off the bottom so they sit flat; cherry (grape) tomatoes—cut horizontally; vine tomatoes—cut in half; red onion—thinly julienne; garlic—cut horizontally across bulbs to expose cloves.

Arrange the prepared vegetables and lemons on a sheet pan, drizzle with extra-virgin olive oil, and season with a few twists of salt and pepper. Broil for about 15 minutes, then set aside.

To make the sauce, combine the juice of two lemons, 4 tablespoons extra-virgin olive oil, and half the jar of Alfredo sauce—stir until smooth.

Follow package directions to cook the pasta, shrimp, and mussels; they each take roughly 5–7 minutes, so time them to finish around the same moment. I like to start them toward the end so everything is hot together.

Drain the pasta, toss it lightly with olive oil, then combine the pasta, seafood, roasted vegetables, olives, and the lemon Alfredo sauce in a warm pot on the stove. Toss gently to heat through and serve immediately, garnished with fresh cilantro.

Tomato Toast

Slice the baguette into 5-inch lengths (or desired toasts). Brush with olive oil and broil for 8–10 minutes, until browned and crisp. (If you have a gas oven, this can go quickly—watch closely.)

Trim the tops off two garlic bulbs to expose the cloves, drizzle with olive oil, and season with salt and pepper. Wrap in aluminum foil and roast for 45 minutes, or place them in the oven while you cook the rest of the meal so they roast alongside other items.

Once the tomatoes are roasted, use the large side of a cheese grater to rub the tomato flesh into a bowl (be careful with your fingers). Spread the roasted garlic onto the toasts, spoon on the grated roasted tomato, and finish with salt and pepper.
